避免鱼肉贴网,可预先将网烤过。使用平底锅时,先加热再倒油进去,待出烟时,鱼放进去烤。事先加些盐、胡椒等,味道更好。牛排也如此作法,用强火烤。依个人的喜好,牛排可有不同的熟度。除了鱼和牛肉以外,其他肉类寄生虫多,一定要烤熟才能吃。<br>
防止鱼表面焦黑,有另一种处理方法:将面粉涂在鱼肉上,热油和面粉可形成一层膜,内部的美味不易散失。<br>
